Cheesy And Creamy Pork And Fusilli Casserole
ByWhenever we make any kind of pasta casserole In The Devil’s Kitchen, we like to use lots of cheese. This tasty casserole has Parmesan cheese in the cheese sauce, and more Parmesan and mozzarella liberally sprinkled on top. Add to that the fusilli pasta (which is made for retaining sauce in its spiral shape) and the nuggets of pork, and you have a devilishly delicious dinner.
Ingredients (Serves 4)
Cheese Sauce
3 tbsp butter
3 tbsp flour
3 cups milk
½ tsp salt
¼ tsp pepper
2 oz (60g) Parmesan cheese, grated
2 egg yolks
The Casserole
12 oz (340g) fusilli pasta
2 tbsp flour
¼ tsp salt
¼ tsp pepper
¾ lb (340g) pork, diced into ½” (12mm) pieces
2 tbsp olive oil
1 onion, chopped
6 oz (170g) mozzarella cheese, grated
2 oz (60g) Parmesan cheese, grated
Cheese Sauce
1. In a medium pot, melt the butter over very low heat. Add the flour and cook for 2 minutes.
2. Whisking briskly, pour the milk into the butter and flour roux in a slow stream. Cook the white sauce for 25-35 minutes, until it slightly thickens. Whisk occasionally and whisk more frequently as the white sauce starts to simmer.
3. Take the white sauce off the heat and whisk in the Parmesan, salt, and pepper.
4. Allow the cheese sauce to cool slightly while you cook the pasta and pork. Then, whisk in the egg yolks shortly before assembling the casserole.
The Casserole
5. Boil the fusilli pasta in salted water, as per the instructions on the package. Don’t overcook. Drain and rinse with cold water to stop it from cooking more.
6. In a bowl, combine the flour, salt, and pepper. Add the pork and toss until coated.
7. In a frying pan, heat the oil over medium-low heat. Add the pork and stir fry for 5-10 minutes, until lightly browned.
8. Add the onion and cook for 10 minutes, until the onion is tender.
9. In a large bowl, toss the pasta and pork until well distributed.
10. Pre-heat the oven to 350F (180c).
11. Spoon the mixture into a 9” x 13” (23cm x 33cm ) casserole dish. Pour the cheese sauce evenly over the top and use a spatula or spoon to work it down into the pasta.
12. In a bowl, combine the mozzarella and Parmesan cheese. Sprinkle evenly over the pasta.
13. Bake for 45 minutes.
