Cheesy Deep-Dish Refried Bean Burritos

Refried Bean Burritos

OK. So, the classic burrito is a nicely folded affair that you can eat in your hand. Well, after the kitchen devils reworked the burrito into a dripping, melty delight, you’ll need a knife and fork to eat these burritos. After your first bite, I’m sure you’ll forgive us.

 

Ingredients (8 burritos)

1 tbsp olive oil

1 onion, chopped

½ lb (270g) bacon, sliced into small pieces

2 15oz cans white beans, rinsed & drained

½ tsp pepper

½ tsp salt

12 oz (340g) cheddar cheese, grated

1 16oz bottle salsa (mild, medium, or hot – to personal taste)

8 6” (15cm) tortillas

 

1. In a large, heavy pot or dutch oven, heat the oil on medium-low heat. Add the onion and bacon. Cook, stirring occasionally, for 15 minutes – until slightly browned.

2. Add the beans, pepper, and salt. Cover and cook – stirring occasionally – for 20 minutes.

3. Roughly mash the beans.

4. Pre-heat oven to 350F (180c).

5. Divide the bean mixture amongst the tortillas. Divide half of the salsa and half of the cheese amongst the tortillas.

6. Roll up the tortillas and place seam down in a 9” x 13” ( 23cm x 33cm) casserole dish. Spread the remaining salsa across the top.

7. Sprinkle the remaining cheese over the burritos.

8. Bake for 20 minutes, until cheese has melted.
