Maple Walnut Apple Crumble
ByWhen autumn draws near, and the apple trees provide us with an abundance of that delicious fruit, it’s time for apple pies and other devilish treats. When you’re just not up to the extra work of making a pie crust, there’s nothing like an apple crumble to quickly and easily put an autumn apple treat on the table.
This one is not only quick and easy. It’s also devilishly delicious, with a maple syrup sauce poaching the apples in their ramekins, crunchy walnuts adding texture, and a rich crumble topping.
Ingredients (Serves 3)
Filling
¼ cup maple syrup
2 tsp lemon juice
1 tsp corn starch
3 apples, peeled, cored, and chopped
¼ cup chopped walnuts
¼ cup natural cane sugar
Crumble Topping
¼ cup flour
2 tbsp natural cane sugar
Dash ground cinnamon
Dash salt
2 tbsp butter, cold & cut into small pieces
¼ cup chopped walnuts
Make Filling
1. In a small bowl, combine the maple syrup and lemon juice. Add the corn starch and mix in until dissolved. Break up any lumps.
2. In a saucepan, combine the maple syrup mixture, apples, walnuts, and sugar. Bring to a simmer while stirring. Cover and simmer for 10 minutes.
3. Uncover and simmer 10 more minutes, until the syrup slightly thickens.
Make Topping
4. In a food processor, pulse the flour, sugar, cinnamon, salt, and butter until it resembles coarse meal.
5. In a small bowl, combine the mixture with walnuts.
Bake
6. Pre-heat the oven to 350F (180c).
7. Divide the filling amongst 3 buttered 8oz ramekins.
8. Divide the crumble topping over the filling.
9. Bake for 35 minutes.
