Fried Onion And Gouda Ham And Cheese Sandwich

This sandwich has a pleasantly subtle taste of gouda, ham, and fried onions. You can also dress it up a bit by spreading mustard, relish, chutney, or other condiments on the bread. Have fun with your sandwich!
Ingredients (2 sandwiches)
1 tbsp olive oil
½ med onion, sliced
4 slices rye bread
2-3 tbsp butter, at spreadable temperature
3 oz (85g) ham sliced
4 oz (110g) gouda cheese, sliced
1. Heat the oil over low to medium-low heat and fry 4-5 minutes per side, until slightly caramelized and slightly browned.
2. Spread 1 tbsp butter on one side of all four slices of bread. On two of the bread slices, layer the ham slices, cheese slices, and fried onions. Then, cap with the other slice of bread.
3. Butter the top slices of bread on the outside (top side).
4. Place the sandwiches buttered side down in a frying pan, over low heat. Butter the top slices of bread.
5. Cover and let cook for 3-4 minutes, until cheese has started to melt and bottom bread is beautifully golden.
6. Flip the sandwiches, cover, and cook another 3-4 minutes.
