Blenderifically Quick And Easy Summer Tomato Soup
ByHere is refreshing, cool, soothing soup with the taste of summer. A dab of honey to tweak the flavour. A large dollop of yogurt to up the mellow factor.
On a hot day, who wants to cook? In fact, who wants to spend more than a few minutes in the kitchen? No need to. Toss everything in a blender, give it a minute of zip, and serve it.
Done. Finito. Soup’s on. And, it’s a refreshing summer treat.
Ingredients (Serves 2-4)
1 lb (450g) tomatoes (about 3 medium)
1 ½ cups chicken stock
1 tbsp honey
¼ tsp salt
½ cup yogurt
1 tbsp chopped parsley
1. Coarsely chop the tomatoes. If you want to add a classy touch and put a tomato garnish (as we did in our picture above, just to be devilishly artsy), reserve the meaty outer part of a quarter of a tomato.
2. In a blender, zip (or blend) the tomatoes, stock, honey, and salt for about one minute. By then, there should only be some wee flecks of tomato red in the mixture.
3. Add the yogurt and give the mix another 10-second zip, to blend it well.
4. Divide amongst bowls (shallow bowls for a dainty side soup for four, or big bowls for two people). Chop the reserved tomato and sprinkle it and the parsley over the soup.






That sounds delicious! And I’ll soon have more tomatoes than I’ll know what to do with, so I know what I’m going to do with some of them now!
