Chewy Nugget Chocolate Brownies
ByLet me list the ways these brownies will fill you with devilish delight. One, they are moist and chewy – like a serious brownie should be. Two, they are loaded with nuggets of molten chocolate that hit you with pleasant surprise. Three, they are 1-2-3 easy to make. Four, you only need one bowl – or small saucepan.
All the mixing is done in the one sauce pan, spooned into a cake tin, and slipped into the oven. Soon, you’ll be devouring these terribly devilish temptations.
Ingredients (9” x 9” cake pan – 16 brownies)
5 oz (140g) dark chocolate (45-60% cacao)
½ cup butter
1 cup sugar (cane or white)
Dash salt
2 eggs
1 tsp vanilla extract
¾ cup flour
1. Break or chop the chocolate into small pieces (¼”- ½” or 5-10mm). Divide the chocolate pieces into two separate piles.
2. In a small saucepan, melt the butter over low heat.
3. Remove the saucepan from the heat and immediately stir in half the chocolate. Stir it until all of the chocolate has melted.
4. Reheat the oven to 350F (180c).
5. Add the sugar and stir into the chocolate/butter mixture.
6. Add the salt, eggs, and vanilla to the mixture in the saucepan. Simply crack the eggs over the chocolate mixture.
7. With a wooden spoon beat the eggs into the chocolate mixture until well combined and smooth.
8. Add the flour and gently stir until combined into the mixture.
9. Add the remaining chocolate pieces and mix into the batter. Then, spoon the batter into a buttered and floured 9” x 9” (23cm x 23cm) cake pan.
10. Bake in the oven for 25-30 minutes, until a toothpick test comes out with moist crumbs, but no batter.
11. Let the brownie cake cool. Then cut into 16 equal pieces.
